2025 Dhillon Glenhope Chardonnay fruit’s is sourced from the Glenhope Vineyard, which sits on ancient granite and sandy loam soils at a lofty 450 metres above sea level. The cool macroclimate yields an extended ripening period, allowing the fruit to build deep flavor concentration while preserving sharp natural acidity.
In the cellar, Dhillon treats this fruit exactly like his ultra-premium Bindi Chardonnays. Destemmed berries are gently pressed, and the juice is transferred straight into small French oak barrels (around 30% new). It undergoes a completely wild-yeast fermentation and remains entirely untouched on its gross lees for 10 months to establish its trademark mid-palate creaminess without excessive wood interference.
