‘100% whole berries, tipped into a fermenter and treated like a Pinot, ie plunged once a day for 12 days, to keep bright and fresh. 10% new French oak. Matured for 10 months in oak prior to bottling. No fining or stabilisation, however lightly filtered prior to bottling.‘ – Wilimee

Deep red-purple colour, mixed spices, white pepper and five spice. Red and dark fruits, blackberries, juicy freshness and elegance, balanced by fine supportive tannins to a long finish.
